Florida Department of Citrus The Objective Bring the Florida Department of Citrus’ revenue back up by finding a new way to brand citrus. The Result The creation of “Citrology,” a 14-day bartending-education program that is recruited by restaurants and bars across the country to provide their employees with the latest citrus-based mixology training. Citrology’s main focuses are to: Introduce FDOC differences and why it’s better Educate how to store, cut, and juice fruit properly Teach basics and foundations of mixology for all drinks and cocktails Practice how to do twists, peels, and rims Encourage how to upsell citrus-centered drinks If Citrology can succeed in raising current drinks sold with a garnish from 2/10 (20%) to 4/10 (40%), garnish sales will increase significantly for the FDOC.
